Meatless Monday: Post-Coachella Immunity Boosting berry Smoothie (with a surprise twist!)

Anybody else recovering from an amazing weekend at Coachella? Maybe you’re still sad it’s all over or maybe you’re still just so excited you even got to go!

I absolutely love Coachella. I extra love camping at Coachella. But what I don’t love about camping is waking up with a runny nose, puffy eyes, and a sore chest from all the wind, fast changes in temperature (anyone else go to bed cold and wake up at 5am sweating through all the layers—just me?), and the dust. Oh yeah, we’ve all heard about the dust and seen the hordes of festival-goers wearing their face masks and bandanas.

Even if you’re not camping you’ll definitely be feeling some effects of the dusty, sun-filled polo fields in the middle of the desert. Add in the pull of refreshing cocktails and beers at the numerous beer gardens, and forgetting to eat three meals a day (I mean who wouldn’t want to eat two massive impossible burgers a day for three days straight?)—and you’ll definitely be feeling the effects on Monday.

So if you’re like me and you’re ready to get some nutrients back into your body after what might be the best weekend of concerts and partying on the West Coast then this smoothie should make it to the top of your list. We’ve got frozen mangoes and berries, fresh orange juice and ripe bananas, and the secret ingredient, ginger!

Fresh berries are full of antioxidants and are known to help prevent from catching a cold. Much like berries ginger also has lots of antioxidants as well as anti-inflammatory properties to help kick start your immune system. Oranges provide lots of vitamin C and greek yogurt is packed with probiotics to help you get over a weekend of filled with lots of beer and heavy foods.

  • Juice of 2 navel oranges

  • 1 cup frozen mixed berries

  • 1 cup frozen mango chunks

  • 2 bananas

  • 1 cup greek yogurt

  • About an inch-long chunk of ginger, roughly chopped

  • 1 tsp apple cider vinegar

  1. Place fresh juice, fruits, and ginger into the blender before adding frozen fruits (this helps to keep it all from freezing up so it blends faster and smoother) and blend together.

  2. Add greek yogurt and vinegar and blend.

  3. Serve immediately and revel in the vitamins!
